Underlying assets are assets that derivatives are based on and derive their value. These assets can be stocks, commodities, indexes, currencies, etc. The price of the derivative is correlated to the price of the underlying asset, whether that be directly correlated (e.g. call option) or inversely correlated (e.g. put option).
